Year 10 Food & Nutrition: Floating Islands

Our year 10 Food & Nutrition students have been making floating islands this morning, with demonstrations of each step provided by Chris from Signature Catering.

Floating islands are a traditional dessert, dating back to the 18th century. The exact form can vary, but the students have been making it with a crème anglaise base, followed by a poached meringue, and topped off with spun sugar. The students enjoyed trying the spun sugar from the demonstration!
